Is Anyone Here a Cheese Whiz?

I've just added a new cheese to my repertoire. Cream cheese is a snap to make, and every bit as good as Philly Cream Cheese (IMHO). It only takes about 24 hours to make, no aging required, and very little in the way of labor.
