    good question. i was thinking of olive oil in airtight mason jars. never really thought about it.

      1-2 years on the counter at 74f. 3-5 at 32-35f which btw will turn it solid. Of the oils, it's the longest lasting in pure form. EVVO will not go past 3 years regardless of how you store it, with 15 months being the median.

      Light, heat, and oxygen are the enemies of all oils.

      If suspended in other products such as canned butter and cheese, the fats can go 7-14 years depending upon which it is. Rendered pork grease that is processed through canning can go 3-5 years.
